I love baking and although I don’t mind all the sweet treats like cakes, cookies, and pies my hips do. So when I baked I try to bake treats that can be considered a little healthier. This past Sunday I surprised the Hubs with some fresh baked Homemade Banana Nut Bread. Well, I wanted it to be a surprise, but he kept coming into the kitchen and messed it all up. It turned out great so I thought I’d share the recipe with you all.
Homemade Banana Nut Bread
2 cups Flour
1 tsp. Baking soda
1/4 tsp. Salt
1 1/8 cup Sugar
1/2 tsp. Vanilla
1/2 cup Vegetable Oil or Coconut Oil
2 tbsp Milk
3 Ripe Bananas (the riper the better)
1/2 cup Walnuts (optional)
Other items needed:
Medium Mixing Bowl
Bread Loaf Pan (glass or metal)
Measuring Spoons & Cups
Wooden Spoon or Spoon
Preheat oven to 325 degrees. Combine all the dry ingredients in the medium mixing bowl and set aside. Peel and place the bananas in the small bowl and mash them well. Add the vanilla, egg, milk, and oil to the dry ingredients and mix until well blended. The mixture will be dry and thick.
Once everything is mixed well, add the bananas and mix. If you’re adding walnuts add half of them now and mix lightly to incorporate the nuts. Pour into your bread loaf pan and add the remaining nuts on top. Bake in preheated oven for 75 minutes. Using a toothpick insert it into the Homemade Banana Nut Bread if it comes out clean then it’s done. Bake longer if need be, checking every few minutes for doneness.
Serve the Homemade Banana Nut Bread warm with a touch of butter on top. Your family will enjoy this delicious treat and it looks delicious sitting at your Sunday brunch table. Place any leftover bread in an airtight container or Ziploc bag and store in the refrigerator.
