I love living a low carb – keto life! I can eat most of my favorite foods and the benefits go way beyond the weight loss. But. . . yes, my lovelies there is a but. . . but, what? Well if you aren’t creative in the kitchen your menus can become a tab bit boring. No frets my loves, super Deb is here to spice up that boring menu.  HA! Sorry got a tab bit carried away. . . . (secretly wonders what it would be like to be a super hero) Anyways . . . Today I would like to share a delicious Creamy Bacon Mustard Chicken Low Carb Recipe that I whipped up the other night. Just look at how delicious it looks and it’s easy too! Can’t beat that, right?

Creamy Bacon Mustard Chicken Low Carb Recipe

Ingredients Needed:

  • 1/2 pound Chicken Breast (8 oz per person)
  • 1/2 pound of Bacon
  • 1/2 cup of Regular Mayonnaise (I use Blue Plate or Dukes brand)
  • Garlic salt, Pepper & Salt (check the carb count in your garlic salt)
  • 4 Tbsp. Butter
  • 2 Tbsp. Dijon Mustard (or more if you like mustard)
  • 3 Tbsp. water
  • 2 Tbsp. of Sour Cream (use regular sour cream)
  • Non-stick skillet with tight-fitting lid

Directions:

  • Slice each chicken breast into strips or cubes, season with the garlic salt and pepper and set aside.
  • Slice the bacon, cook to your desired crispness, remove from the skillet and set aside.
  • Drain about 1/2 of the bacon fat from the skillet, place back on burner on med heat. Add the chicken and start browning it slightly on each side, then cover skillet and turn heat to simmer. This will help cook the chicken and create some natural juices. Cook for 6-8 mins.
  • While the chicken is simmering it’s time to mix up the sauce. In a small-medium bowl add the mayo, mustard, and water. Mix thoroughly.
  • Remove skillet from the heat and add the sauce mixture, stir well to coat the chicken then add the sour cream. Place skillet back on the burner and heat for 3 mins. Serve with your favorite low carb side dish. I made fresh green beans with ours and it was delicious!

  • Fiber less than 1g
  • Total Fat 6.2g

  • Carbs 1.2g – coming from the sour cream
  • Fiber less than 1g
  • Total Fat 97.55g

As you can see the carb count for this dish is amazingly low, calories are a bit up there because of the mayo and bacon. I served up 1/2 for my hubs and 1/2 for myself. I could only eat 1/2 of my portion.

Even thou I am living this lifestyle I still follow the basic rules of eating when you’re hungry and stop when you almost full.  What almost full? What does that even mean? Well, we’ve all have eaten so much that we feel stuffed, right? You know that point you get to right before that “stuffed feeling” when you’re looking at your plate and thinking I might as well finish this, I only have a couple of bites left. Well, my loves that’s the almost full point, and you should be stopping there. It’s a good habit to start and live by.

Remember you can still over eat on a low carb – keto lifestyle, just because you’re eating very low carbs if you’re eating 4,000 calories a day your results will be much slower than some eating 1,500 calories.
