Ingredients

  • 2 large skinless boneless chicken breasts
  • olive oil
  • salt & pepper
  • 16 asparagus stalks, trimmed
  • 4 fresh mushrooms
  • garlic seasoning
  • bacon

Instructions

  • Preheat oven to 350 degrees F.
  • Cook the bacon to near doneness or almost to the desired crispness. Set aside.

  • Cut the chicken breasts in half, length-wise, leaving it intact on one side (butterflied). Season the insides with salt, pepper and garlic seasoning. Lay 8 stalks of asparagus and half the mushrooms in the center of each chicken breast. Drizzle a little olive oil over the asparagus and mushroom. Fold over the chicken halves enclosing the filling.
  • Season the outside of the chicken breasts with salt, pepper, garlic seasoning. Transfer the stuffed chicken to an oven safe dish.

  • Wrap the bacon strips around each breast, tucking the ends under the edge of the chicken. Cover the dish with foil and place in the oven. Bake for 30 minutes, remove the foil and put your oven on broil place the dish back into the oven for 3 – 5 minutes to brown the tops.
  • Remove from oven, serve and Enjoy! You can drizzle the natural juices from the dish over the tops of the chicken prior to serving.
  • Note that Chicken should be cooked to an internal temperature of 165 degrees.
